Popis: The dairy industry is one of the most advanced food sectors regarding the application of novel technologies to process milk-based products which are important for human health because they are rich in fatty acids, proteins (casein and albumin), lactose, minerals, and vitamins. Due to the increasing consumption of milk products, different types of fermented milk such as yogurt, kefir, koumiss, chal, kurut, airag, whey beverages, ymer, cuajada, shubat, labneh, suusac, kulenaoto, obtaining from buffalo, goat, sheep, camel, yak, or mare milk, are manufactured throughout the world. The majority of these traditional products are produced in The Middle East, South-East Asia, West Asia, Central Asia, Eastern Europe, South American, and Mediterranean countries. Meanwhile, references are made to improve the quality and safety of these products. Also, considering some of the dairy problems for specific groups, some alternative products have also been looked at.
