In this study, the probiotic properties and optimum growth conditions of Lactiplantibacillus plantarum BG24 were investigated. L. plantarum BG24 have a high probiotic potential due to its growth at low pH and high bile salt concentrations and its ability to utilize lactose. The adhesion rate of BG24 to Caco-2 cells was 37.51% and it showed resistance to 8 of the tested 19 antibiotics. The highest enzymatic activities of BG24 were found for Leucine arylamidase, β-glucosidase, Valine arylamidase, β-galactosidase and N-acetyl-β-glucosaminidase. The specific growth rate, doubling time and biomass productivity values of L. plantarum BG24 increased by the enrichment of MRS broth (pH 6.5) with yeast extract (5 g/L). The growth of L. plantarum BG24 was optimized in stirred tank bioreactor and the maximum biomass production of 3.84 g/L were obtained at the optimum levels of process variables (aeration rate 0.05 vvm, agitation speed 479 rpm, inoculation rate 3% and time 18 h). |
