3D Simulation of Transient Thermal Response of Mucuna Seed subjected to Laser Heating: A Parametric Study Approach

Popis: The 3D numerical investigation of thermal behaviour of mucuna seed drying under laser heat application is presented with the view to predicting the temperature distribution within the studied food product using finite element. A waveform function was adopted for the simulation and the solution of the heat transfer equations was done with Comsol multiphysics assuming a 3D mesh generation from 2-D axisymmetric geometry. The equations were formed with a mucuna seed diameter and thickness of 20.57 mm and 8.23 mm, respectively. Lagrange Triangular Finite Element with fine size was employed to generate the geometry of the mesh. The effect of laser radiation and seed rotation on temperature and conductive heat flux distribution on drying of mucuna seed was investigated. Heat transfer occurred first from the exterior and moved towards the core. The heat transfer on the surface of the product depends on the diameter and rotational speed of the mucuna seed sample. The laser as a heat source has a marginal drying time required for the seed sample. The temperature increased significantly with increasing laser power and time and speed in rotation of the product. The study finds usefulness in agri-food manufacturing industry that processes heat-sensitive materials, given its potential to offer vital information for optimal drying temperature of high-quality dry food materials.
