The purpose of the work was to develop a project for a 50-seat dining room in the Okhta business center. Based on the purpose of the work, the following research tasks were formulated: justify the need and feasibility of designing a dining room; develop the production program, menu and technological documentation of the dining room, the scheme of functional interconnection of premises; develop the layout of the dining room with the placement of modern technological equipment; develop a staff schedule and a schedule for the company's staff to go to work; to give a description of the measures providing safe working conditions; calculate the main indicators of production and trade activity of the dining room and draw conclusions about the economic feasibility and profitability of the projected dining room. The final qualification work was performed on the basis of electronic and printed sources. All calculations were made taking into account the requirements of regulatory documentation in force in the territory of the Russian Federation. |
