Popis: | Formaldehyde in the fish body has been occured naturally through the work of trimethylamine-NOxidedemethylase (TMAO)ase enzyme that breaked TMAO into formaldehyde and dimethylamine.Formaldehyde fish has been occured during storage. This reserch aimed to determine of TMAOase activityand its role in the formation of dimethylamine and formaldehyde lizard fish (Saurida tumbil) stored atchilling temperature. Observations were made every 2 days for 16 days of storage. Analysis was performedamong other content of formaldehyde, dimethylamine, and specific activity of TMAOase enzyme. Result offormaldehyde test increased during storage of day 0 was 0.22±0.00 ppm to 7.45±0.46 ppm on day 16. Theresults of dimethylamine test increased during storage from 0,93±0,50 ppm at day 0 to 27.26±1.8 ppm onday 16. The results of specific activity TMAOase lizardfish activity increased during storage that was 1.15 U/mg on day 0, to 16.47 U/mg on day 16. |
