The authors report the results of a study on child nutrition conducted in Haiti in 172 young children suffering from moderate protein and energy malnutrition. Immediately after weaning, 56 children received a milk powder preheated before spray-drying (high-temperature milk), and 116 children, a non-preheated milk powder (low-temperature milk) during a period varying according to children and averaging 45 days. The level of specific anti- α -lactalbumin, anti- β -lactoglobulin, and anti-casein antibodies was measured in the serum every fifteen days; the intestinal tolerance to both milk powders was examined. Proteins in preheated milk were less antigenic than those of low-temperature milk; no significant differences were noted between the two milks as for intestinal tolerance. |
