Задачи, которые решались в Ñ Ð¾Ð´Ðµ выполнения выпускной квалификационной работы: проведение анализа рынка услуг предприятия общественного питания; разработка концепции предприятия; разработка производственной программы, меню и Ñ‚ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ‡ÐµÑÐºÐ¾Ð¹ документации для кафе; расчет Ð½ÐµÐ¾Ð±Ñ Ð¾Ð´Ð¸Ð¼Ð¾Ð³Ð¾ Ñ‚ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ‡ÐµÑÐºÐ¾Ð³Ð¾ оборудования и разработка планировочного решения кафе; разработка организационной структуры управления предприятием, составление штатного расписания; разработка мероприятий по Ð¾Ñ Ñ€Ð°Ð½Ðµ труда; расчет и оценка Ð¾ÑÐ½Ð¾Ð²Ð½Ñ‹Ñ ÑÐºÐ¾Ð½Ð¾Ð¼Ð¸Ñ‡ÐµÑÐºÐ¸Ñ Ð¿Ð¾ÐºÐ°Ð·Ð°Ñ‚ÐµÐ»ÐµÐ¹ деятельности предприятия. На основе Ð¿Ñ€Ð¾Ð²ÐµÐ´ÐµÐ½Ð½Ñ‹Ñ Ð¼Ð°Ñ€ÐºÐµÑ‚Ð¸Ð½Ð³Ð¾Ð²Ñ‹Ñ Ð¸ÑÑÐ»ÐµÐ´Ð¾Ð²Ð°Ð½Ð¸Ð¹ был определен потенциальный контингент потребителей и была разработана концепция кафе. Также была обоснована вместимость предприятия и установлен режим работы – с 08:00 до 21:00 ч ежедневно. Разработано меню, произведены Ñ‚ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ‡ÐµÑÐºÐ¸Ðµ расчеты, подобрано Ð½ÐµÐ¾Ð±Ñ Ð¾Ð´Ð¸Ð¼Ð¾Ðµ оборудование. На основе реального плана помещения площадью 248 м2 было разработано и представлено планировочное решение кафе. Была разработана организационная структура управления кафе, составлено штатное расписание и Ð´Ð²ÑƒÑ Ð½ÐµÐ´ÐµÐ»ÑŒÐ½Ñ‹Ð¹ график работы персонала кафе. Количество сотрудников – 25 человек. Была составлена должностная инструкция для повара горячего Ñ†ÐµÑ Ð° и стандарт обслуживания официантами в кафе. Были разработаны мероприятия по Ð¾Ñ Ñ€Ð°Ð½Ðµ труда и пожарной безопасности, были созданы комфортные и безопасные условия для персонала предприятия. Были рассчитаны основные экономические показатели предприятия, по результатам ÐºÐ¾Ñ‚Ð¾Ñ€Ñ‹Ñ Ð¾ÐºÑƒÐ¿Ð°ÐµÐ¼Ð¾ÑÑ‚ÑŒ предприятия составит 2 года и 10 месяцев. Полученные результаты подтверждают, что кафе «Сельдерей» на 50 мест по адресу г. Санкт-Петербург, Малый проспект Васильевского острова д. 48, к. 2 может успешно существовать на рынке общественного питания.
This work is devoted to the calculation and design of a cafe of a general type. The following tasks were solved during the course of the final qualification work: 1. analysis of the market for the services of a public catering enterprise; 2. development of the concept of the enterprise; 3. development of a production program, menu and technological documentation for a cafe; 4. calculation of the necessary technological equipment and development of a planning solution for a cafe; 5. development of the organizational structure of enterprise management, staffing; 6. development of labor protection measures; 7. calculation and evaluation of the main economic indicators of the enterprise. On the basis of marketing research, a potential contingent of consumers was identified, and the concept of a cafe was developed. The capacity of the enterprise was also justified and work hours were set - from 08:00 to 21:00 daily. A menu was developed, technological calculations were made, the necessary equipment was selected. Based on the real plan of the premises with an area of 248 square meters, a planning solution for the cafe was developed and presented. The organizational structure of the cafe management was developed, the staffing table and a two-week work schedule for the cafe staff were drawn up. The number of employees is 25 people. A job description was drawn up for a cook in a hot shop and a standard for service by waiters in a cafe. Measures for labor protection and fire safety were developed, comfortable and safe conditions were created for the personnel of the enterprise. The main economic indicators of the enterprise were calculated, according to the results of which the payback of the enterprise will be 2 years and 10 month. The results obtained confirm that the cafe «Celderey» for 50 seats at the address St. Petersburg, Maly Prospekt Vasilievsky Island 48, building 2, can successfully exist in the catering market.
