Popis: Purpose. Determination of trends and economic rationale for the development of the market of products from spelt as a relic of a culture, based on a comparison of its consumer properties with modern cereals; quality assessment of spelled flour.Methodology. During the researcheswe used the methods of minimum - maximum, observation, averaging and generalization, the method of distribution by categories, the quantitative descriptive method.Findings. It has been determined that the prototypes of spelt flour are of excellent quality in terms of organoleptic characteristics. Compared to the control - wheat flour, spelled flour has a nutty flavor and aroma, which has a positive effect on the overall score. During the researches of the taste and smell of flour samples by the method of profiling, taking into account the descriptors defined by tasters, it was concluded that samples of flour from organic spelt have a more pronounced harmony of taste and aroma. The factors contributing to the growing of domestic enterprises ofthe agricultural sector and harvesting, which are sufficient to ensure both domesticneeds and the formation of a powerful export potential, are determined. These include favorable climatic conditions in Ukraine, over-saturation of the market of cereal flour from inorganic wheat, increasing population's desire for healthy nutrition and directly the chemical composition of spelled. It is noted that for today, the Ukrainian spelet market remains narrow and is characterized by reduction of volumes of production of flour from it. At that time, the world trends of consumption of products from spelled and the prevailing prices of its implementation inUkraine testify to the economic expediency and prospects of the development of the studied trend in the Ukrainian agricultural sector.Originality.The advantages of spelled flour, in particular organic spelt flour, are established by organoleptic characteristics compared to traditional wheat flour using modern methods of sensory analysis. The ways of further development of the domestic market of spelled flour are proposed.The practical value.The results of the researches of organoleptic quality indicators, as well as a comparison of the chemical composition of spelt grain and wheat, can be used not only by specialists in trade, food industry, and nutritiology, but also in cosmetology and medicine.
