Popis: In this chapter fats are described as a class of lipids. Lipids, in general, are classified based on Bloor’s taxonomy, with different levels of details given to the description of fatty acids, phospholipids, cholesterol, and vitamin D. Extraction processes for animal fats are described, with emphasis on fish oils, the primary group of animal fats to which significant health benefits are associated. Nutraceutical and pharmaceutical applications are presented, as well as a discussion on the relationship between various classes of fats and health. Here, saturated fats as well as long-chain polyunsaturated fatty acid (with emphasis on omega-3 fats) are discussed at length.
