The menu and the production program of the restaurant were developed taking into account specialization. The capacity of the restaurant is 486 people per day, the number of dishes sold is 1628. Technological calculations of equipment were made, the areas of the main premises of the restaurant were calculated. Taking into account the current plan of the leased premises with an area of ââ350 m2. A planning solution for the restaurant has been developed. The organizational structure of the enterprise was determined, the staffing table was drawn up and a two-week schedule for going to work for 36 restaurant employees was developed. A job description for a cook, a standard for the order acceptance procedure and a list of potential suppliers were drawn up. Measures have been developed to ensure the safety of the activity of the projected enterprise. The main economic indicators of the restaurant's activity for the year are determined.
