Influence of Water Activity on Glyceride and Glycol Ester Synthesis by Lipase From Rhizopus arrhizus

Popis: A concomitant increase in the synthesis activity of lipase from Rhizopus arrhizus and water activity (a w ) was shown until an optimum level, observed at a water activity (a w ) of 0.3 with a linoleic acid incorporation of 75%. A regular decrease occured above a w 0.3. The synthesis was specific for α 1–3 glycerol positions since monoacyl-sn-glycerol and 1,3 diacyl-sn-glycerol were preferentially synthesized. Glycol ester synthesis was achieved with lipase from Rhizopus arrhizus , but the reaction was lower than the glycerol ester synthesis. This difference can be explained by the presence of a secondary alcohol group or an apolar group which reduces the synthesis rate.
