Today there is a growing interest in donkey (Equus asinus) milk for human consumption due to its nutraceutical properties and presumed health benefits. Also, some antioxidant, antitumoral, and antimicrobial activities of donkey milk (DM) have been observed in several studies. However, the data on DM consumption In humans is so limited and only one randomized clinical trial was conducted using DM, in which the DM ability to use as a fortifier was investigated. The present study will undertake a scoping review to determine the extent of available studies of DM characterization and its beneficial properties, as well as to identify any existing gaps in knowledge.
