Popis: Various food processing technologies are used to make food palatable and appetizing, achieve food safety and shelf-life extension, and satisfy consumer needs for variety, convenience, and price. Irradiation is used commercially in many countries for pasteurization and sterilization, insect disinfestation, and sprout inhibition. In this chapter, we will evaluate the various technologies that are commercially used for these applications and discuss the advantages that irradiation offers, the constraints that are responsible for it being underutilized, and the opportunities for increased use.
