ЧеÑез 4,2 года наÑÐ½ÐµÑ Ð¿ÑиноÑиÑÑ Ð¿ÑибÑлÑ. The purpose of given work is to calculate and design a cafet of Russian cuisine. Tasks that were solved during the graduate qualification work: 1. to conduct marketing research; 2. to develop a menu, a planning and calculation menu; organizational management structure of the cafe; measures for labor protection at work; 3. to conduct an economic calculation of the main indicators of the cafe's production, trade and financial activities. In given work, a marketing study was conducted, which allowed us to choose the optimal location for the planned enterprise and identify potential consumers. The concept of the cafe was developed, the capacity was justified. Working hoursâ9:00- 21:00. The total number of visitors in the projected cafe for the day â 1045 people, number of dishes â 5624 PCs. The menu was developed, technological calculations were made, and the necessary equipment was selected. Based on the actual plan of the room with an area of 390 m², the layout of the cafe was developed and presented. The cafe management scheme has been drawn up, and the staff schedule has been developed. The number of employees is 34. A two-week schedule for the staff to go to work, job description for the cook of the IV category and the standard of appearance of the waiter. Suppliers have been identified. Measures have been developed to ensure the most comfortable working conditions in the workplace. The annual economic indicators of the cafe are calculated. We can conclude that it is advisable to open a cafe of Russian cuisine, it will not only be popular, but also achieve effective results in its activities. After 4,2 years, it will begin to make a profit. |
