A study was made of water absorption by gelatin, modified with various substances and water absorption by modifying substances themselves and the effect of the latter on the level of moisture content of the system consisting of gelatin-water-modifying substances determined. A study of the resistance to mechanical impact of modified gelatin according to moisture content enabled the limits of moisture content to be established within which gelatin can be modified by low molecular weight substances, this effect being expressed by an increase of impact strength. Below this limit of moisture content of gelatin there is no modifying effect independent of the degree of interaction of the low molecular weight component with gelatin and its absorption properties in relation to water. When modifying gelatin to form a heterophase system the moisture content of gelatin, like the molecular weight and concentration of the high molecular weight modifying component, influence the degree of separation of the system, which determines the level of impact strength of gelatin films. The problem of physical and chemical modification of gelatin is explained using the information obtained. |
