Nutritional potential and effect of the solvent on the extraction of secondary metabolites from pulp and bark of baru (Dipteryx alata)

Popis: | The objective of this work was to determine the nutritional potential of baru pulp in three harvests of the fruit (lots of 2013, 2014 and 2015) and to evaluate different solvents in the extraction of secondary metabolites. Nutritional composition, mineral content and total phenolics, flavonoids and condensed tannins were determined. The results showed that baru pulp has a high nutritional content, appreciable mineral and content of phenolic compounds. Higher levels of phenolic compounds were found in the peel in relation to the pulp. Solvents with different polarities had significant effects on the content of total phenolics extracted; the most efficient solvent for extracting phenolics from the pulp was the NaOH solution (5%), while the least effective was absolute acetone. This study increases the knowledge about baru pulp and gives theoretical subsidies regarding the nutritional properties, the phenolic content and its extraction process for its use by researchers and fruit producers. |
