Popis: The recovery of high added-value compounds such as polyphenols requires a holistic approach through the development of economically feasible, sustainable, and safe processes. The recovery process typically involves five distinct stages, which have recently been introduced as the “5-Stage Universal Recovery Process” for the proper management of the selected processes through application of conventional and emerging technologies. The process often progresses from the macroscopic to the macromolecular level, followed by extraction, purification, and encapsulation of the desired compounds. Technologies for each stage should be designed specifically for each raw material and target compound, since each method is unique to the sample and all the influential factors might have the ability to enhance the recovery process, whereas the absence of proper judgment may cause degradation or loss of polyphenols. Thus it is necessary to optimize each process separately to obtain a maximum yield of polyphenols. This chapter reviews the application of conventional techniques for the recovery of polyphenols from different natural sources and various food processing by-products.
