Popis: Cereals are the major components of human diets and are traded as a commodity on a global scale. Often there is a price differential based on the suitability of a variety for use in a defined end product or quality. This provides a need for the ability to accurately identify varieties right through the value chain and for the ability to breed for quality to provide a competitive advantage. In this chapter the different methods for variety identification will be discussed, as will research into the genetic basis of quality which provides molecular markers that can be used to assist in breeding for quality.
