Resumen Resumo Three classical spectrophotometric systems were assayed for the determination of sucrose and fructose using reverse flow injection analysis (FIA) approaches as an alternative to the traditional batch analysis. FIA parameters and reaction conditions were optimized and the sucrose inversion process, using the common approach of heating in a concentrated HCl medium, as well as that in continuous flow using milder conditions, was studied. The analytical performance characteristics of the studied systems were compared. The detection limit for sucrose resulted to be 3 and 10 mg/L sucrose using the resorcine and the periodate method, respectively. Under optimized operating conditions, amounts of sucrose and fructose in the range from the detection limit up to 80 mg/L could be determined. The methods employing resorcine and potassium periodate as oxidants for the reducing sugars were selected for real sample analysis.
