Popis: This study reports the result of a survey designed to uncover the various ways French restauranteurs react to being promoted by Michelin Guide, a major restaurant guide, aside from price changes. The restaurants surveyed include all who received an increased rating from the Michelin Guide during the 1990–1995 period. The results provide strong evidence of the important effect that guide book ratings have for restaurant behavior.
