Popis: Работа посвящена разработки организации производственно-торговой деятельности кафе-кондитерской, в Ñ Ð¾Ð´Ðµ работы были выполнены поставленные задачи для определения успешной работы предприятия в сфере общественного питания. Проанализированы сферы деятельности кафе-кондитерской по месту расположения проектируемого предприятия. Обосновано количество мест в размере 55. Разработаны ряд мер по организации производственно-Ñ‚ÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸Ñ‡ÐµÑÐºÐ¾Ð³Ð¾ процесса и грамотно спроектированы требуемые помещения для данного предприятия в арендуемом здании с учетом Ð²ÑÐµÑ Ð½Ð¾Ñ€Ð¼ и правил на плане. Разработана правильная организация управления персоналом в кафе-кондитерской с учетом Ð²ÑÐµÑ Ð½ÐµÐ¾Ð±Ñ Ð¾Ð´Ð¸Ð¼Ñ‹Ñ Ð´Ð¾ÐºÑƒÐ¼ÐµÐ½Ñ‚Ð¾Ð². Разработана правильная работа с точки зрения Ð¾Ñ Ñ€Ð°Ð½Ñ‹ труда и безопасности в кафе-кондитерской. Обоснован экономический анализ с точки зрения эффективности развития и целесообразности открытия кафе-кондитерской на 55 мест. Работа проведена на базе нормативной документации в сфере развития предприятия общественного питания и сбора дополнительной информации из Ð¸ÑÐ¿Ð¾Ð»ÑŒÐ·ÑƒÐµÐ¼Ñ‹Ñ Ð¸ÑÑ‚Ð¾Ñ‡Ð½Ð¸ÐºÐ¾Ð² для написания данной работы. В результате разработки документации для проектируемого предприятия, а именно кафе-кондитерской SUGAR» на 55 мест расположенного в Петроградском районе г. Санкт-Петербург по адресу ул. Зверинская, дом 2, этаж 1. Площадь арендуемого здания равна 220 м2 с учетом Ð²ÑÐµÑ Ð¿Ñ€Ð¾ÐµÐºÑ‚Ð¸Ñ€ÑƒÐµÐ¼Ñ‹Ñ Ð¿Ð¾Ð¼ÐµÑ‰ÐµÐ½Ð¸Ð¹ Ð²Ñ Ð¾Ð´ÑÑ‰Ð¸Ñ Ð¸ не Ð²Ñ Ð¾Ð´ÑÑ‰Ð¸Ñ Ð² экспликацию общая площадь составила 257 м2. Срок окупаемости предприятия составил 3 года, что является Ñ Ð¾Ñ€Ð¾ÑˆÐ¸Ð¼ показателем при открытии и процветания в дальнейшем кафе-кондитерской «SUGAR» на 55 мест.
The work is devoted to the development of the organization of production and trade activities of a cafe-confectionery, in the course of which the tasks were fulfilled to determine the successful operation of the enterprise in the field of public catering. The number of seats in the amount of 55 is justified. Analyzed the scope of activities of the cafe-confectionery at the location of the projected enterprise. A number of measures have been developed to organize the production and technological process and correctly designed the required premises for this enterprise in a rented building, taking into account all the rules and regulations on the plan. The correct organization of personnel management in the cafe-pastry shop has been developed, taking into account all the necessary documents. The correct work from the point of view of labor protection and safety in the cafe-pastry shop has been developed. The economic analysis from the point of view of efficiency of development and expediency of opening of cafe-confectionery for 55 places is proved. The work was carried out on the basis of normative documentation in the field of development of public catering enterprises and collecting additional information from the sources used for writing this work. As a result of the development of documentation for the projected enterprise, namely the sugar cafe-confectionery " for 55 seats located in the Petrogradsky district of Saint Petersburg at 2 Zverinskaya street, floor 1. The area of the leased building is 220 m2, including all designed premises included and not included in the explication, the total area is 257 m2. The payback period of the enterprise was 3 years, which is a good indicator when opening and thriving in the future cafe-confectionery "SUGAR" for 55 seats.
