Resume During growth and maturation of Prunus persica fruit (cv yellow Earliglo), the pigments of the mesocarp are of the foliar type, i.e. chlorophylls a and b , β-carotene, lutein, epoxylutein, violaxanthin and neoxanthin. The transformation of the ovary into the green adult fruit is accompanied by a decline in the content of chlorophylls; total carotenoids decrease to level as low as 55% of the initial content, and subsequently transitorily accumulate. In mature fruits, 42% of the carotenoids are oxidized and all carotenoids are of the β-configuration: β-carotene, cryptoxanthin and its epoxides, zeaxanthin, antheraxanthin, auroxanthin and trollichrome. At maturation, the carotenoids disappear but the chlorophylls remain in traces. |
