Cultivation of baker's yeast by a fermenter with a basket-shaped unit for agitation

Popis: A simple and new basket-shaped unit for agitation made of stainless wire was developed. A fermenter equipped with this unit attained higher kLa, than 3500 h−1 under the condition with an aeration rate 2vvm and a rotation speed of the unit 1100rpm. In the cultivation of baker's yeast, the cell concentration reached about 110g per liter on dry weight basis in 17.5h.
