Popis: This chapter provides general information about understanding the link between infant formula and food allergy (FA), mainly by detailing the molecular mechanism of FA and nutritional issues, cows’ milk allergy, and methods to prevent allergies for infants. On the basis of elucidating the nutritional risk, dietary counseling, and milk allergen, the corresponding infant-feeding guidelines were discussed. Regarding the prevention of FA, especially in infancy, the role of breastfeeding, hypoallergenic infant formula, and microflora are discussed. The hydrolyzed milk formula may be an optimal alternative because allergen epitopes are broken and some allergen peptides may be able to induce T-cell tolerance. Moreover, armed with an in-depth insight into the role of the microflora in food allergy and tolerance, prebiotics and probiotics may be added to infant formula.
