Staphylococci are widespread in nature. They are commonly found on human and animal skin and on mucous membranes. The genus Staphylococcus includes many species. They are divided into coagulase-positive staphylococci (CPS) and coagulase-negative staphylococci (CNS). Among these species, only the CPS species Staphylococcus aureus is considered a foodborne pathogen. CNS are a vast group not associated with pathogenic risk after food consumption although they can sometimes be associated with safety hazards. However, most CNS are considered food-associated beneficial microbiota and two species, Staphylococcus xylosus and Staphylococcus carnosus , are commonly used as starter cultures for meat fermentations due to their relevant technological properties. |
