Popis: Regularities of an influence of concentration of a substance (saccharose, isopropanol) dissolved in water on the amount n of water bound by starch and determined by a conventional chemical tracer technique were studied. Experimental results in the 0–50% concentration range are described by the corresponding polynomials, and their extrapolation to zero concentration leads to the same value n = 0.52 g/g. Comparing the activity of water in solutions and near the adsorbent surface, it was concluded that the concentration of the substance dissolved in the bound water gradually decreases when approaching an interface. Therefore, the bound water is characterized by a lowered solution power. An improved chemical tracer technique is proposed for the determining the amount of the bound water in the disperse systems equilibrated with the bulk water.
