Popis: | Goat milk composition can be influenced by diet, such as adding exogenous enzymes into the feed to improve digestibility. The objective of this study was to evaluate milk composition and cheese goat yield when ruminants consumed an enzymatic extract obtained from spent Pleurotus ostreatus substrate. A one-way experimental design was used in this study. Enzymatic activity and milk composition were measured (fat, lactose, minerals, protein, total solids and non-fatty solids) while fresh cheese yield and their traits, such as color and texture, were also were determined. The enzymatic extract presented xylanase, laccases and cellulases activity (32227.72, 2822.33 and 69.03 IU MS g−1, respectively). Results indicate that the enzymatic extract increased the cheese yield (P |
