Popis: Food security is one of the key problems of nowadays. The safety requirements for the food products group needs to be harmonized in the global market. According to international standards, the Organization must establish and implement system of traceability. This system allows you to track the party product from raw materials to processing and marketing, i.e. identify the goods at each stage of the chain. An effective system of traceability allows you to track products up or down the supply chain, i.e. to determine the origin of the object, identify the material coming from the direct provider and end products, dispensed through the direct distributors. One of the most important elements of quality assurance systems is the fast and clear identification of the product at any stage of its production. The Global GS1 traceability standard enables access to the data on the history of the product - from the origin to the distribution point. In the case of threats to food security, traceability allows to track and pinpoint the stage of the process or product, where there is a problem, and to exclude it from the food chain. Modern systems of traceability can be used as a tool to optimize production, improve product quality and security.
