Beverages are one medium for the hydration and nutrients addition to organism. Additionally, the presence of polyphenolic compounds provides beverage a variety of sensorial properties, flavors, colors, and health benefits; where the composition of many alcoholic and nonalcoholic beverages has been studied showing the existence of these compounds and its potential consumption in daily life. Currently, the extraction and addition of these polyphenolic compounds in beverages has been implemented in greater quantities, being more attractive to the consumers and giving the final product a higher additional value. In this work, the analysis of the potential extraction of polyphenolic compounds was studied, using the techno-economic evaluation with the software Aspen Plus and Aspen Process Economic Analyzer (Aspen Technology Inc.), through different technologies for further addition to beverages. Then the valorization of the beverage is analyzed. As a result, it is demonstrated through the NPV for these products estimation and the profit based on market values for the functional beverage that the overall process is an interesting health business. Additionally, the environmental impact of these processes was studied. |
