This chapter focuses on events related to digestion and absorption beginning with a description of the relevant functional anatomy involved in these processes. The role of various enzymes for digestion in the gastrointestinal tract of the macromolecular foodstuffs (i.e., carbohydrates, lipids, and protein) to molecules that can be readily absorbed is discussed. Finally, the factors involved in the absorption of carbohydrates, amino acids, lipids, and select nutrients (i.e., calcium, iron, and vitamins) are considered. |
