Food-grade gases are widely used in the food industry. They are classified as ingredients used in the carbonation of beverages, processing aids used for food freezing, food additives used as propellants or packaging gases, or extractive solvents for extraction of caffeine. Among the standards proposed, the Food Safety System Certification 22000 (FSSC 22000) is the most appropriate for manufacturers of ingredients such as the CO2 used for the carbonation of fizzing beverages. This chapter describes similar risk assessments and quality management systems to food manufacturing that apply to gases. |
