Popis: This paper reviews new ideas on human nutrition in the twentieth century, particularly noting any clues to explain the unexpected post-war rise in the ‘diseases of Western civilization’. The review demonstrates the great importance of the micro-nutrients in relation to health and disease. Their reduction in the diet as a result of over-refining and processing of food may have been a significant factor in the changing pattern of food-related diseases in this century; there is need to increase the proportion of whole foods consumed. A plea is made for a return to a former Ministry of Food concept and practice of having a core of ‘protective foods’ day by day, so ensuring an abundant supply of the important micro-nutrients. It is likely that the increase in coronary heart disease and other conditions has been accentuated by the reduced intake of the health-promoting micro-nutrient-rich fibre foods just when there was an increased need for them due to the rise in consumption of fats and free sugars.
