In the course of work, the feasibility of designing a family restaurant with 70 seats at a given address has been substantiated. A potential consumer contingent has been identified, an enterprise concept has been developed, the most cost-effective mode of operation has been selected, and a production program has been drawn up. The number of people visiting the family restaurant per day is 253, the number of dishes is 1072. The menu of the family restaurant has been compiled, which includes dishes of European cuisine. In addition to the menu with a free choice of dishes, a children's menu and a wine list have been presented. The equipment has been calculated, the areas have been determined, and the layout of the premises has been made taking into account the real floor plan of the leased premises with an area of 378,7 sq.m. A family restaurant management scheme has been developed and a staffing table has been compiled. A two-week work schedule for 30 restaurant employees, a job profile of a cook, a standard of service for the procedure for submitting an invoice have been also established. The main suppliers have been selected. Measures have been developed to ensure the safety of life and comfortable working conditions in the production premises of the family restaurant. The economic calculations made show that the payback period of investment and production costs in the amount of 10784500 rubles, will be 3.8 years. |
