Popis: Antibiotic/Antimicrobial residues occur in foods of animal origin as an unwanted concomitant of drug use in animal agriculture. Residues occur in all types of food of animal origin including milk, muscle tissue and organ tissue, due to the widespread use of antibiotics/antimicrobials for growth stimulation and disease prevention and treatment. Data on the incidence of residues in animals from the statistically-based monitoring programs, surveillance programs and in-plant testing performed by the FSIS/USDA are presented for 1988 and 1989. The results of spot market surveys of residues in milk for 1989 – 1990 are presented. Reasons for the frequency of residues and their potential biological significance are discussed.
