Equivalence of nomenclature and yield of primal cuts of beef in northwest of Mexico

Popis: With the aim of knowing the nomenclature equivalence of primary cuts from the bovine carcass with reference to the one commercialized and institutionally used in both Mexico and the United States, specialized guides on the subject were reviewed and consulted. Comparative tables were made with the nomenclature of each of the primary cuts; additionally, the commercial yield of the primary cuts from the bovine carcass was calculated. With this exercise, the equivalences have been established between the different primary cuts, identified through the commercial and institutional guides of the United States of America and Mexico, with reference to the Northwest of Mexico. The commercial performance for the forequarter was 38.23%, 29.59% for the hindquarter and 31.72% for other carcass components. The chuck roll bone and the beef plate are the cuts that contribute the most to the forequarter; the highest valued cuts represented 20.23%. The nomenclature homologation of the primary cuts from the bovine carcass will facilitate the commercial exchange of beef and with the knowledge of the commercial performance, greater added value will be given to the production.
