Popis: U ovom radu napravljen je teorijski pregled nutraceutika i jestivih filmova, te primjene nutraceutika u jestivim filmovima. Detaljno je objašnjena definicija nutraceutika kako bi se ukazalo na razliku od funkcionalne hrane i dodataka prehrani. Opisane su fitokemikalije s nutraceutskim svojstvima i potencijalno pozitivnim utjecajem na zdravlje čovjeka, te mogućnost liječenja kroničnih bolesti. Prikazane su neke od metoda ekstrakcije i analize nutraceutskih spojeva. Napravljen je pregled materijala od kojih se proizvode jestivi filmovi i prevlake, način njihove izrade i svojstva. Konačno, istražena je inkorporacija nutraceutika u jestive filmove i njihova sinergija. In this thesis, a theoretical review of nutraceuticals and edible films was made, and the application of nutraceuticals in edible films. The definition of nutraceuticals is explained in detail to indicate the distinction of functional food and food supplements. Phytochemicals with nutraceutical properties and potentially positive effects on human health and the possibility of treatment of chronic diseases have been described. Some of the methods of extraction and analysis of nutraceutical compounds are presented. An overview of the materials from which edible films and coatings are produced has been made, and also the way they are produced and their properties. Finally, the incorporation of nutraceuticals into edible films and their synergy was explored.
