Eating behavior in childhood involves choices and preferences. Parents, caregivers, peers and the environment can positively or negatively affect the architecture of food choices. The decision-making capacity of school-age children is developing, which may lead to poor nutritional choices. Scientific objective: To investigate the association of cognitive flexibility, inhibitory control and infant feeding in relation to food supply in the school environment. Technological objective: To develop an Educational Portal to broaden the repertoire of healthier eating possibilities facing choices in the school environment. Methodology: The study was conducted with students from private schools, aged between 6 and 10 years, of both sexes, enrolled from the 1st to the 4th grade of elementary school. Two instruments were used during the research: the Five Digit Test (FDT), to investigate the executive functions of children and, consequently, the decision-making capacity, which considers higher scores as worse performance in these functions; and the School Environment Food List (LAAE), prepared by the researcher, which sought information on food purchase from children in the school canteen. The results obtained supported the elaboration of the Educational Portal, which was developed through a partnership with a journalist and a cartoonist. Brainstorming techniques were performed seeking various perspectives to reach the best result. The visual style was defined through colors and fonts that best suited readability and prolonged eye contact. Its construction was directed to children as well as parents/caregivers, teachers and school cafeteria managers. Results - Scientific manuscript: It was found that the younger the age of the child, the higher their scores for cognitive flexibility and inhibitory control and, therefore, the lower their decision-making ability. Children with lower executive function scores bought fewer ultra-processed foods (p |
