Perairan Laut Nusa Tenggara Timur (NTT) memiliki potensi yang sangat beragam, Cakalang (Kasuwonus ppelamis) adalah satu komoditas ekspor perikanan pelagis yang banyak didaratkan di Pelabuhan Perikanan Pantai Tenau Kupang. Penelitian ini dilakukan pada Bulan Nopember 2021 sampai Bulan Januari 2022 di Perairan Laut Kupang NTT. Metode penelitian ddilakukan dengan cara Observasi lamgsung diatas kapal Purase Seine, guna mengetahui jenis dan jumlah hasil tangkapan, serta penerapan sanitasi higiene di atas kapal. Pengumpulan data dilakukan melalui survey observasi, wawancara dan pengisian kuestionaer. Dilakukan analisa data secara kuantitatif, guna mengetahui hasil tangkapan dan komposisi jumlah tangkapan serta mutu secara organoleptik. Hasil penelitian menunjukkan jumlah hasil tangkapan dan komposisi pada penangkapan adalah Ikan Cakalang berjumlah 492,219 kg dengan persentase 43.08 %, Yellow fin Tuna 257,756 kg (18,75 %), Big Eye Tuna 179.810 kg (13,08 %), Layang 136.507 kg (9,93 %), Tongkol 111.625 kg (8,12 %), Lemadang 77.120 kg (5,61 %), dan Salmon 19.658 kg (1,43 %). Mutu ikan cakalang yang diangkat dari jaring menunjukkan nilai organoleptik 9,0 dan pada penyimpanan pada palka menunjukkan nilai 8,5, dan setelah sampai di pembongkaran menunjukkan nilai 7,5. Penerapan sanitasi dan higiene di atas kapal belum di terapkan dengan baik. Kata Kunci : Komposisi , purse seine, hasil tangkapan Abstract - The sea waters of East Nusa Tenggara (NTT) have very diverse potential, Cakalang (Kasuwonus ppelamis) is a pelagic fishery export commodity that is mostly landed at the Fisheries Port of Tenau Beach, Kupang. This research was conducted from November 2021 to January 2022 in the Kupang Sea, NTT. The research method was carried out by direct observation on the Purase Seine ship, in order to determine the type and number of catches, as well as the application of hygiene sanitation on the ship. Data was collected through observation surveys, interviews and filling out questionnaires. Quantitative data analysis was carried out, in order to determine the catch and the composition of the number of catches as well as organoleptic quality. The results showed the number of catches and the composition of the catch were skipjack tuna, amounting to 492.219 kg with a percentage of 43.08 %, Yellow fin Tuna 257.756 kg (18.75 %), Big Eye Tuna 179.810 kg (13.08 %), kite 136.507 kg (9 ,93 %), Cob 111,625 kg (8,12 %), Lemadang 77,120 kg (5,61 %), and Salmon 19,658 kg (1,43 %). The quality of skipjack tuna removed from the net showed an organoleptic value of 9.0 and in storage in the hold it showed a value of 8.5, and after arriving at the unloading it showed a value of 7.5.
