•P. pentosaceusBBS1 and L. plantarumBBS13 isolated from fermented bamboo shoots.•Enterobacteriaceae is inhibited due to the organic acids produced by the strains.•BBS1 and BBS13 treatment significantly reduced cyanide content.•Inoculation of BBS1 and BBS13 shortens fermentation from 15 to 5 days.•BBS1 and BBS13 improve the quality and productivity of fermented bamboo shoots. |
