Abstrakt: We found that the enzyme from rice-koji of Aspergillus oryzaeremoved single glucosamine residue from a sequence of β-(1-4)-linked glucosamine chain, such as chitosan and glucosamine oligosaccharides. It became clear that the N-acetyl-β-d-glucosaminidase of Aspergillus orvzaewas characterized as an exo-β-d-glucosaminidase.
