The nutritional values of the protein of milk, of whey and of a mixture of the two in amounts to simulate the caseinwhey protein ratio of human milk were determined by several rat assay procedures. Whey protein and the mixture of whey and milk protein were found to be superior to milk protein alone. Tests of commercial infant foods containing either milk protein alone or the whey-milk protein mixture also yielded results showing a nutritional superiority for the protein mixture. The higher biological activity of the protein mixture simulating the casein-whey protein ratio of human milk was attributed to the higher content of sulfur-containing amino acids. |
