Abstrakt: •L. paracaseiF2 was able to ferment inulin in vitro.•The entrapment yield of L. paracaseiF2 in pectin microparticles was ∼92%.•Inulin from Helianthus tuberosusL. significantly enhanced L. paracaseiF2 viability.•Encapsulated synbiotic presented major survival along storage time and GI passage.
