•MO-OPA is a derivatizing agent for the evaluation of histamine in seafood.•The proposed derivatization agent avoids the manipulation timekeeping.•The fluorescence intensity of MO-OPA/Histamine complexes is stable for 50 h at 4 °C.•LOQ is 5 times lower and linearity is one order of magnitude higher than with OPA.•MO-OPA is used to quantify Histamine rate in real tuna samples. |
