Enzymatic Generation of Factors from Malt Responsible for Premature Yeast Flocculation

Abstrakt: Using a rapid, small-scale fermentation assay for testing premature yeast flocculation (PYF), it has been shown that PYF is associated with malt husk and can be induced by fungal infection during malting. Exposure of malt to extracellular fungal extracts induced PYF and exposure to commercial fungal xylanase had an impact on PYF. Arabinoxylan, the polysaccharide product of xylanase action on husk, also had an impact on PYF.
