Optimal growth of bakers’ yeast in fed-batch operation can be defined as holding the respiratory quotient at an optimal value, such that negligible ethanol production occurs. A model of the process has to be identified in order to apply a good controller. Fed-batch bakers’ yeast fermentation is an inherently non-linear and time-varying process. Among the many possibilities of building a (nonlinear model we propose a strategy consisting of: (static) non-linear pre-compensation combined with identification of a linear model. For the oxidative growth on glucose, this strategy results in two high order models that describe the data rather well. |
