Abstrakt: |
A previous study showed that short-chain sterically hindered esters of vitamin A demonstrated better stability in solution than the commercial plamitate. The oxidative stability of the short-chain sterically hindered esters, however, was poor. This work indicated that a long aliphatic chain with steric hindrance in the α-position was necessary for maximal stability. A compound of this type, vitamin A α,α-dimethylpalmitate, was prepared and evaluated. |
