Summary In a hot solution of N,N-dimethylacetamide or N,N-dimethylformamide, acidified with succinic acid, ascorbic acid and its derivates (esters, salts) form a stable reddishpurple complex by reaction of the intermediate dehydroascorbic acid with glycine. This reaction may be used to detect the presence of ascorbic acid in various products enriched with vitamin C, an amount between 10–15 µg in 0,5 ml being necessary. An assay procedure, applicable also to wine and urine as well as some examples, is described in detail. |
