Antioxidative Activities of Oxindole-β-acetic Acid Derivatives from Supersweet Corn Powder.

Abstrakt: The article presents a study which investigates the antioxidative activity of supersweet corn powder (SSCP) particularly the Oxindole-3-acetic Acid Derivatives. The study evaluated the diphenyl-2-picrylhydrazyl (DPPH) radical-scavenging activity and aglycone to determine the components for SSCP's anti-oxidativity activity. The result of the study shows that increase in the heating-related release of antioxidative phenolic compounds was link to the increase in the antioxidative activity of SSCP.
