Quality of Buffalo Milk at Dairy Farms in the State of Pernambuco, Brazil.

Abstrakt: The buffalo was inserted in Pernambuco, at the beginning of the 1970s, and is perfectly adapted to environmental conditions in the region, but information on the production of these animals are still scarce. The objective of this study was to evaluate quality of the buffalo milk produced in the state of Pernambuco. The farms were located with help from the Builders Association of Buffalo and Defense Agency and Supervisory Agricultural State of Pernambuco. Were collected 149 buffalo milk samples in five different farms from January to October 2009. Were evaluated milk yield, percentages of fat, protein, lactose and total solids. To assess the presence of mastitis was used the test CMT (california mastitis test) and somatic cell count (SCC). The data were analyzed by means of the GLM procedure of SAS. The milk yield between the farms ranged from 2.67 to 5.25 L/day. For the percentage of protein these values were 3.82 to 4.24%, fat from 5.39 to 8.21%, lactose 4.38 to 4.99 and total solids of 15, 55 to 17.75%. The CCS was low and ranged from 22,110 to 111,400 cells/mL and CMT presented 53.06% was sample negative. The production and composition of milk varied between the farms, but this did not affect the quality of milk produced. [ABSTRACT FROM AUTHOR]
