Abstrakt: The article considers data from a large multicentric case-control study of oral and pharyngeal cancer conducted in Italy to examine the role of flavonoids on the risk of oral and pharyngeal cancer. A control-to-case ratio of -5 was chosen for women, as opposed to -2 for men to compensate for the rarity of oral and pharyngeal cancer in women. The study found that certain classes of flavonoids, in particular, flavanones and flavonols, are related to the risk of oral and pharyngeal cancer.
